Pancetta Crisps with Goat Cheese & Pear

Ingredients:
- 16 thin slices of pancetta
- 16 tsp of soft goat cheese
- 2 small very ripe pears, halved, cored & cut into 1/4 inch thick slices
- Fresh thyme leaves
To make:
- Preheat oven to 450
- Place pancetta in a single layer on a large rimmed baking sheet
- Bake about 10 minutes or until crisp
- Using a spatula, slide pancetta crisps to platter
- Top each with a tsp of goat cheese and 1 pear slice
- Sprinkle with thyme
- Enjoy!
Notes:

- Pear can be substituted for avocado
- Pancetta will be VERY greasy after baking, I suggest patting the crisps with a paper towel to soak up some of the grease before adding the cheese and pears/avocado
