Ingredients:
- 9 lasagna noodles, cooked
- 10 oz frozen chopped spinach, thawed and completely drained
- 15 oz ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg
- salt & pepper
- 32 oz tomato sauce
- 3 oz mozzarella cheese, shredded
- Preheat oven to 350
- Combine spinach, ricotta, Parmesan cheese, egg, salt and pepper in a bowl
- Ladle about 1 cup of sauce on the bottom of a baking dish
- Lay a lasagna noodle flat on the counter and fill with spinach mixture (roughly 1/3 of a cup), spread evenly over noodle
- Roll the noodle and place it (seam down) in the baking dish
- Repeat with remaining noodles
- Ladle remaining sauce over the rolls in the baking dish
- Cover rolls with mozzarella cheese
- Cover with tin foil and bake for 35-40 minutes
- Enjoy!
Notes:
- This is a super simple recipe. Great meal for an individual or group.
- I use a 9 x 12 baking dish.
- Make sure that noodles are dry before adding mixture.
- I don't like tomato sauce, so I use Alfredo sauce instead.
- This can easily be made into a lasagna. Layer sauce on the bottom of baking dish, lay noodle flat over sauce, spread spinach mixture, add another layer of noodles, top with sauce and mozzarella cheese.
I would like this but the spinach would scare my husband.
