Make With Me- Spinach Manicotti

Spinach Manicotti


Ingredients:
  • 9 lasagna noodles, cooked
  • 10 oz frozen chopped spinach, thawed and completely drained
  • 15 oz ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg
  • salt & pepper
  • 32 oz tomato sauce
  • 3 oz mozzarella cheese, shredded
To make:
  • Preheat oven to 350
  • Combine spinach, ricotta, Parmesan cheese, egg, salt and pepper in a bowl
  • Ladle about 1 cup of sauce on the bottom of a baking dish
  • Lay a lasagna noodle flat on the counter and fill with spinach mixture (roughly 1/3 of a cup), spread evenly over noodle
  • Roll the noodle and place it (seam down) in the baking dish
  • Repeat with remaining noodles
  • Ladle remaining sauce over the rolls in the baking dish
  • Cover rolls with mozzarella cheese
  • Cover with tin foil and bake for 35-40 minutes
  • Enjoy!

Notes:
  1. This is a super simple recipe. Great meal for an individual or group.
  2. I use a 9 x 12 baking dish.
  3. Make sure that noodles are dry before adding mixture.
  4. I don't like tomato sauce, so I use Alfredo sauce instead.
  5. This can easily be made into a lasagna. Layer sauce on the bottom of baking dish, lay noodle flat over sauce, spread spinach mixture, add another layer of noodles, top with sauce and mozzarella cheese.
