Asian Mushroom Skewers

Ingredients:
- 1/2 cup bottle Thai-ginger marinade
- 1 clove garlic, minced
- 8 ounces fresh mushrooms, cleaned
- 12 fresh pearl onions
- 1/2 medium red bell pepper, cut into 8 pieces
- 4 12 inch metal skewe
- Blend marinade and garlic in a medium bowl
- Add mushrooms, onions and pepper pieces
- Seal bowl and refridgerate for 1 to 4 hours
- Heat grill to medium
- Place one pepper piece, 1/4 mushroom, 1/4 onion, another pepper piece on skewer
- Repeat on the other 3 skewers
- Place skewers on grill
- Grill covered for 15-20 minutes or until vegetables are tender, turning occasionally
- While grilling, you can brush the skewers with the remaining marinade if desired
- Enjoy!
Notes:
- You can use frozen, partially thawed pearl onions
- 2 tablespoons chopped fresh cilantro and 1/4 teaspoon cayenne can also be added to the mixture
- Instead of a bowl, everything can be placed in a large ziplock bag
