Ingredients:
- 1/2 cup of hot jalapeno jelly
- 3 tbsp fresh lime juice
- 2 1/2 cups mango, peeled, pitted and chopped
- 1 1/4 cups red pepper, chopped
- 3/4 cup red onion, chopped
- 1/3 cup fresh cilantro, chopped
- 1 jalapeno pepper, minced (optional)
- Pepper (to taste)
To Make:
- Whisk jelly and lime juice in large bowl
- Mix in the remaining ingredients
- Season to taste with pepper
- Cover and chill until ready to serve
- Enjoy!
Notes:
- This is my cousin Moira's recipe.
- This makes a great side for fish, chicken or pork.
- Can also be served as an appetizer- top a cracker and cheese with this mango salsa.
