Make With Me- Cottage Pancakes

No blog post yesterday- I had a surprise visit from my dad! I had about an hour left of work, when my dad sent me a text saying he'd be in town about half an hour after I got home from work. Instead of blogging, I took the night off to spend time with my dad.

Anyway...on to today's post!


Cottage Pancakes

Ingredients:
  • 2 large eggs
  • 1/2 cup cream style small curd cottage cheese
  • 1/2 cup sour cream
  • 1 tbs sugar
  • 1/2 tsp salt
  • 1/2 cup thoroughly forked-stirred flour

To Make:
  • Beat eggs slightly
  • Add cheese, sour cream, sugar & salt
  • Beating the above just enough to distribute ingredients, mixture will NOT be smooth
  • Gradually fold in flour
  • Drop 1/4 cupfuls of mixture well apart on a hot, oiled griddle
  • Bake until dry around the edges
  • Turn and brown on the other side
  • Enjoy!

Notes:
  1. Many, many, many years ago, I befriended a woman named Rhonda and her friend Kathy (from Brownwood, Texas) gave Rhonda this recipe.
  2. Kathy had a note to serve the pancakes with jelly and extra sour cream.
  3. Makes about 8 pancakes.
  4. I have tried on several occasions to make these pancakes and have never been successful- I have a hard time not burning pancakes.  I have never in my life made pancakes of any kind without setting off the smoke detector. If you are able to make Cottage Pancakes, please let me know if they are any good!

  1. Oooo, thanks for the recipe. Lallie loves pancakes but I'd rather feed her something nutricious rather than the empty calories.
