Ingredients:
- 8 eggs
- Green onion, finely chopped
- Fresh spinach, finely chopped
- Yellow peppers, finely chopped
- Flaxseed wraps (4)
- Cheddar cheese, grated
- Salsa (optional
To Make:
- Scramble eggs with onion, spinach and yellow peppers
- Place eggs on flaxseed wrap
- Top with grated cheese
- Top with salsa, if desired
- Microwave for 45 seconds
- Repeat with next wrap
- Enjoy!
Notes:

- Breakfast is my favourite meal, but I love this recipe because it's something you can eat on the go.
- It's roughly 2 eggs per person, so this serves 4 people.
- Flaxseed wraps can be replaced with any kind of wrap.
- Adding salsa will make the wraps VERY messy!
- My cousin's note: Experiment with fillings- mushrooms, asparagus, bacon, ham...You choose!
