Aunt Mary's Bacon & Cheddar Quiche
Ingredients:
- 1 cup grated old cheddar
- 3/4 cup flour
- 1/2 tsp salt
- 1/2 tsp mustard powder
- 1/4 cup melted butter
- 1 medium onion, chopped
- 1/2 lb bacon, cooked and broken into pieces
- 2 eggs
- 1 cup of milk
- 1 pinch oregano
- Pepper
To Make:
- Mix 1/2 cheddar, flour, salt, pepper, mustard powder with melted butter (mix well)
- Press into 9: pie plate
- Add onion and bacon, spread on pie plate
- Beat 2 eggs
- Add oregano and pepper to eggs
- Melt remaining cheese (1/2 cup) in 1 cup milk and mix with eggs
- Pour over onion and bacon
- Bake at 350 for 30-50 minutes
- Enjoy!
Notes:
- Another recipe from my Aunt Mary.
- Crust can be made and frozen ahead of time.
- My cousin has found that most vegetables leave the egg mixture too watery, but has found that peppers and Italian sausage work well. She also says that mushrooms can be used IF they are dried with a paper towel after cooking.
